BIO
Influenced by his immersive and dedicated perspective on the arts, Executive Chef Olivier Palazzo transcends cuisine, offering a holistic experience of the new generation of gastronomical and cultural innovation. His experience working with the Michelin star restaurant le Quinzième, upscale Parisian bistros, and being Manager and Executive Chef of Cyril Lignac’s Aux Prés and Le Chardenoux in Paris, have allowed him to develop an international, distinctive and premium culinary universe.
HISTORY
Originating from the Ivory Coast has allowed Palazzo to be immersed in the restaurant industry since the age of 15. In his earlier years his work in Toulouse, France, with acclaimed Parisian Chef Cyril Lignac with whom he opened and managed Aux-Près as well as leading the kitchen at Lignac’s Le Chardenoux, gave him the exposure to
high-end cuisine, before relocating to New York to work with Jean Georges at ABC Kitchen and ABC Cocina. He also worked as Head Chef at Loosie Rouge, one of the most sought after restaurants in Brooklyn. More recently, Palazzo has worked as manager and consultant for Le Song, a popular French restaurant in Chelsea Market, and as Executive Chef for the Levinson family, co-owners of the NY Yankees and privately-owned real estate company.
Palazzo’s culinary approach is rooted in time-honored French technique while drawing inspiration from the range of his diverse influences and travels, including places such as South Europe, Central America, North and West Africa, the Caribbean and the Middle East.
